Delicious Tomato Tart


6 oz  – 170g of plain flour, 3 oz/85g  of butter

2-3 tablespoons of cold water

2 – 3  teaspoons of mustard

4 – 6 large tomatoes, or 25 – 30 cherry tomatoes

5 -6 oz of cheddar cheese – any of our fabulous Welsh cheddars e.g. Black Bomber, Colliers, Cadog, …

Parsley, basil, mint and 1 tablespoon of olive oil


Preheat the oven to 180 degrees/Gas mark 4

Make the pastry – rub the butter into the flour until the mixture looks like breacrumbs.

Add the cold water – mix and make into a dough.

Chill for 30 minutes if you have time.

Roll out the pastry.  (no need to blind bake)

Cover the pastry base with a layer of the mustard

Add the grated cheese

Cover with the tomatoes

Cook in the oven for 15 minutes

Mix the chopped herbs with the oil

Take the tart out of oven and cover with the herb/oil mixture

Cook for a further 5 minutes.
