2 tablespoons Welsh beer/ale/cider                                    

100g Welsh cheese (or strong/mature cheddar)

1/8 leek/2 spring onions   – finely chopped

1 tablespoon flour

1 tsp mustard

2 pieces of bread

Salt and pepper

Instructions  

To start – put the bread to one side, place all the other ingredients into the saucepan and cook over a gentle heat.

Stir the mixture continuously until all the ingredients have melted and the sauce has thickened. Leave to cook so that it thickens again.

Grill your slices of bread on both sides.

Cover one side with the mixture

Grill until they are brown and bubbling.

 

Alternative recipe – Mushroom Rarebit – (substitute the bread with 2 large mushrooms).

Preheat oven to 200c.

Brush the mushrooms with some oil and bake for 10 – 15 minutes.

While the mushrooms are cooking, place all the other ingredients into the saucepan and cook over a gentle heat.  Stir the mixture continuously until all the ingredients have melted and the sauce has thickened. Leave to cook so that it thickens again.

Fill the inside of the mushrooms with the rarebit mixture.
