Welsh Rarebit  

Ingredients: 2 tbsp Welsh beer,100g Welsh cheese, 1/8 leek/spring onion, 1 tbsp flour , 1 tsp mustard, 2 pieces of bread/2 mushrooms, salt & pepper.

Instructions

Mushroom Rarebit – Preheat oven to 200c. Brush the mushrooms with some oil and bake for 10 – 15 minutes. While the mushrooms are cooking, place all the other ingredients into the saucepan and cook over a gentle heat. Stir the mixture continuously until all the ingredients have melted and the sauce has thickened. Leave to cook so that it thickens again. Cover one side with the mixture Grill until they are brown and bubbling. With bread To start – put the bread to one side, place all the other ingredients into the saucepan and cook over a gentle heat. Stir the mixture continuously until all the ingredients have melted and the sauce has thickened. Leave to cook so that it thickens again. Grill your slices of bread on both sides. Cover one side with the mixture Grill until they are brown and bubbling. 250g mixed fruit, 300ml black tea, 2 tbsps orange marmalade, 2 beaten eggs, 125g soft brown sugar, 125g butter, ½ tsp mixed spice, 250g self-raising flour, ¼ tsp baking powder, ¼ tsp bicarbonate of soda

Put the fruit into a large saucepan, cover with the hot tea, bring to the boil and simmer for 2 minutes (or soak overnight) Strain off the liquid and pour the fruit into a mixing bowl.  Add the butter and sugar and whisk together until soft and fluffy.  Add the marmalade and mix again then add the eggs and mix well again.  IF you have boiled and simered the tea, leave to cool a little. Mix the dry ingredients and add to the fruit mixture. Fold the dry ingredients until everything is mixed in. Spoon the mixture into a greased 900g loaf tin and bake in a preheated moderate oven for 1 hour at gas mark 4, 350f, 180c,  and 30 minutes at gas mark 2, 300f, 150c. 

When cooled, slice and serve with a lovely layer of Welsh butter (salted) plus a little cheese if you fancy.   Cheddars and blue cheeses work really well.
