Ingredients:

225g fine oatmeal, 50g plain flour, 30g golden caster sugar, 3 – 4 tbsps milk, 75g unsalted butter, 1/2 tsp baking powder, 1/4 tsp cream of tartar, 1/2 tsp salt.

Instructions  

Preheat oven to 190C/375F/gas mark 5

Put the oatmeal into a bowl. Add the flour, the golden caster sugar, the baking powder, the cream of tartar and the salt. Mix the ingredients together, add the butter and rub in until the mixture looks like breadcrumbs.  Add the milk and mix to bring everything together to form a dough.

Roll out the mixture until it’s about 5 mm in thickness.  Cut into rounds and place onto a greased baking tray. Cook in a preheated oven, 190C/375F/gas mark 5 for 20 minutes. Transfer onto a tray for cooling.

Lush with jam, marmalade, honey – or any kind of cheese – welsh of course!  If you can’t find oatmeal, you can use porridge oats and grind them in a food processor.  If you do this, you will need more milk – probably 6 – 7 tablespoons.
